christmas cake biscuits

a friend posted a recipe for fruitcake cookies recently.
they looked delicious, but involved soaking fruit overnight and then chilling the dough for four hours.
i just didn’t have time, but i wanted those flavours in a biscuit right away.
i adapted the famous edmond’s cookbook vanilla biscuit recipe.
250g butter
1 cup soft brown sugar
1 cup caster sugar (i had some marinating with vanilla beans)
2 eggs
4 cups flour
4 tsp baking powder
100g mixed fruit
2 tsp of spice…..i used a mix of cinnamon/allspice/mixed spice
3 tsp mixed essences: i used vanilla/almond/rum
ok, a couple of notes.
i ground my own wholewheat flour to get a very crispy nutty texture to the biscuits.
i used local free range eggs.
i think this makes a big difference.
pre-heat the oven to 190 C.
grease up some baking sheets.
cream butter, sugar and essences together.
add eggs.
sift flour, spices, and baking powder together, and add that and mix gently with the fruit.
put your thumb and forefinger together….see the circle there? ok? roll balls about that size of the dough and place on cold baking trays.
press them down with fork tines dipped in hot water.
bake for 15 to 20 minutes…..keep an eye on them.
turn onto racks to cool.
makes about a million decently large biscuits.
next time, i think i’ll add a little more fruit. like double. i like mixed fruit.

I have just taken these out of the oven. Waiting for them to cool to try. I used just over 200 gms sultanas, rasins and currents as well as glase cherrys. soaked them in brandy. DH liked the raw batter, he always has to lick the bowl.

yes but they are a bit soft prefer a crisper bikky. I used a soup spoon maybe I should have used a heaped teaspoon 200 gms of fruit doesnt seem much to me now that I have made them will use wholemeal flour next time I make them

hmmm, maybe a slightly longer bake time for more crispiness.
i made some more and i just added fruit until i liked the look of the batter. and some chopped brazil nuts too.
it’s a flexible mix.
