maurice made the most delicious dinner tonight!

it all started with the bengali paanch phora mix of five seeds: nigella/fennel/black mustard/cumin/fenugreek in equal quantities, with some added garam masala/turmeric/chilli.
he fried up an onion with the seed spices, in mixed butter and oil.
then he added chopped fresh coriander and mint and salt and some baby potatoes cut in half.
he added water and cooked gently.
in another pan he seared some chopped chicken thigh fillets and added those to the potatoes, along with the other spices and the juice from one fresh lime.
if i told you how good this was all smelling by now, you simply wouldn’t believe me!

meanwhile, i had hauled out the dehydrator and was busy with a load of freshly picked tomatoes and chillies.
i had a couple of trays spare after all that, so i looked around the kitchen and pounced on a hand of very ripe bananas……they are now drying merrily as well.

i had just finished loading the dehydrator and dinner was served, taaa daaaaa!
i had mine in a bowl with a spoonful of yoghurt, and plenty of chopped parsley and scallions on top, and i think it was the nicest thing i’ve eaten all week.

    I love Ponch Phoran spice. I had a fantastic Bengali fish curry at the Oberoi and I had to recreate it the second I got home. It was very much like Maurice’s potatoes, except with fish and some mustard seeds. So good!
