getting hold of a really good omelette pan is starting to feel like an impossible dream to me.
i loathe teflon and all it’s little chemical friends with thinly disguised names.
from ebay, i bought a gorgeous american lodge pre-seasoned cast-iron pan, but it turned out to be hopeless for omelettes. the eggs stick like nobody’s business. it just isn’t smooth enough. (lovely pan and good for other things though…and the price was a bargain).
stainless steel is too sticky.
aluminium….god does anyone still cook in that stuff at all?

what i want is a 16 to 20 cm enameled cast iron pan.
do you think i can find one in australia?
they have lots of 28cm pans.
they have some le creuset pans that are 22cm but that come as a set with a saucepan.
i don’t need another saucepan, i want an omelette pan.
there are enameled cast iron pans with wooden handles….no thanks.

i found a pair in the vintage section of etsy.
they weren’t cheap, but they looked ideal.
to ship them both would have doubled the cost (i got a quote).
now i am sniffing around uk websites because it seems the brits understand omelette pans.
there is a 20 cm le creuset pan with integrated metal handle available in the UK and nowhere else i can find.
now i just have to find someone who will ship to me.
i’m feeling mighty persuasive.
my husband makes the best omelettes on the planet and i think he deserves a really really excellent pan.

i hear that loads of people in the same boat…searching for the perfect omelette pan….why is it such a drama? none of my usual online cookware suppliers have got anything remotely suitable.
do people not eat omelettes any more?
are we a minority now?
is it all tagines and terrines and brass woks for making thai desserts?
