omelette

we had quite a lavish lunch today: soto ayam, an indonesian chicken soup.
it’s a clear turmeric-y sour-ish chicken broth filled with noodles, cooked potato cubes, boiled egg, chopped tomato, scallions, bok choy, fresh herbs.
well, that’s how i make it, anyway. perhaps the bok choy isn’t strictly correct.
very colourful and very delicious and quite a large bowl when it’s all piled together.
so, tonight i was in the mood for something light and while watering the garden i gathered a few things in my pockets for dinner.
here it is: zucchinis, tomatoes (we’ve finally managed to grow a few little stunted tomatoes, but they taste great), scallions, chives, parsley, thyme, marjoram.
i sauted it all together in a bit of olive oil and my groovy cast iron frypan that i obtained off ebay….it’s a pre-seasoned lodge pan from america and it’s wonderful to cook in.
shortly my husband will work his magic with the local free range eggs that we get from the wonderful lady down the hill every week….he has a touch with eggs and i just do not get in his way. my job is to butter the toast and make admiring noises.
