the zucchinis are still coming thick and fast.

this will make a really huge bowlful of salad.
shred a large zucchini or a couple smaller ones (i used a an 850g monster), salt it and leave it in a colander to drip for an hour.
press juices out when you are ready to cook it.
cook up 500g pasta shells or spirals or penne.
saute an onion or a handful of scallions, plus a couple cloves garlic.
add a couple cups of finely shredded silverbeet or spinach and the pressed zucchini shreds.
saute until vegetables are bright green and cooked.
remove from heat.
add a couple cupfuls of drained cooked chickpeas.
add a couple tins tuna.
some sliced sundried tomatoes.
a couple handfuls of chopped fresh herbs.
add sea salt and pepper to taste.
dress with mayonnaise thinned down with red wine vinegar and serve warm or cold.
this will do 6 people as a summery meal on it’s own.
