vanilla biscuits

these little biscuits, or cookies, as our american friends prefer to call ‘em, are my favourites for the last 40 years and still going strong.
i am at least a third generation baker of these simple little bikkies….the recipe is from that iconic masterpiece of kiwi home cookin’ “the edmonds sure to rise cookbook”.
while the edmonds doesn’t exactly give elizabeth david any kind of run for her money, it is nevertheless a solid and time-honoured staple for those moments when you require a recipe for yo-yoes, or economical fruit cake, or sponge cake or mock whitebait fritters.
here is the recipe:
cream 125g butter, 225g sugar and a few drops of vanilla essence together.
add one egg.
add sifted plain flour, 225g and 1 tsp of edmond’s baking powder or whatever other brand you may be afflicted with if you don’t happen to live in NZ, plus 50g sultanas.
roll into smallish balls, place on cold greased trays, press with a fork, bake 15 to 20 mins at 190C.
really, too easy and too rewarding.
i used soft brown sugar today and got a nice bronzed effect and bonus caramel flavour.
