i have an easi-yo yoghurt maker and it’s wonderful.
you simply fill the thing with boiling water, then place another container inside, in which you have made your yoghurt mix.
leave it for 8 to 12 hours and bob’s your uncle, fresh yoghurt.

the easi-yo packets are simple milk powder, yoghurt starter, and flavourings.
i use the greek style which is plain and thick and costs slightly more.
recently, i began to wonder why it cost more.
i figure it’s just extra milk powder to make the finished stuff extra thick.

so.
i mixed 2 TBSLP easi-yo greek yoghurt powder
1.3 cups milk powder
topped the whole thing up with water and proceeded as usual.

12 hours later, i’ve got perfect thick yoghurt and importantly, i’ve also got MOST of a packet of greek starter left in the fridge, ready to be used again.

i’m on a yoghurt roll….i’ve just made yo-cheese….drained my yoghurt for 3 days (caramello eats the whey mixed with cooked roo meat, go figure) then mixed it with herbs and garlic and salt, rolled it in balls and packed it into olive oil.

and i’m about to make a lassi with yoghurt and fresh lychees, honey and a pinch of salt……
