sweet chilli sauce

it’s been simply pouring with rain and we’ve got a very happy garden.
i’m grateful that we won’t have to hand water for a few days at least.
elizabeth planted some beautiful lemon-scented native grasses today…i must find the latin name for them.
when you crush them, they smell wonderful.
maurice picked a bowlful of the ripe black knight chillis….they had turned from black to bright red.
i decided to adapt a sweet chilli sauce recipe that had been given to me, but i felt it lacked a little excitement.
i simmered the following for about thirty minutes:
1 cup black knight chillis (bloody hot and i used them whole, seeds etc)
4 cups dark brown sugar
4 cups red wine vinegar
4 cloves garlic cut in half
4 cups chopped apple (i used some pear and capsicum as well)
3 tsp five spice
3 tsp salt
zest of one orange
simmer all together for about 30 minutes.
at this stage, i got my bamix in there and whizzed it all until it was smooth-ish.
add cornflour/vinegar paste if you feel it needs a bit of thickening.
bottle while hot.
very spicy and tasty and rich and dark.
