a winter dinner

my mother and my husband cut soap tonight…which left me with an unexpected window of time to make something gorgeous for a late dinner.
first, i peeled and roughly chopped some apples.
i threw those in a pot with some apple cider vinegar, sherry, water, sugar, allspice, fresh ginger, muscatel raisins and orange zest.
i let this little mix simmer until apples were soft, raisins were soft and plump and liquid had evaporated to a sticky goo around the apples.
then, i sliced up half a jap pumpkin and coated the slices in some styrian pumpkinseed oil (the nuttiness, richness and dark caramel orange colour of this oil has to be seen to be believed) brown sugar, whole cumin seeds, pepper and salt.
i put these in a tray and put them in the woodstove for some extra smoky slow-cookin’ action.
a bok choy from our garden got washed and sliced, to be quickly fried off with tamari and water and sesame oil and a little sugar.
quite a sugary little dinner, in fact…..
finally, i took a couple of butterflied lean pork steaks, salted, peppered and oiled them…..threw them into a pan at high heat, cooked both sides, then let them sit for ten minutes.
they cooked perfectly and were tenderly delicious, topped with the apple chutney…..bok choy and caramelly pumpkin on the side.
