salade nicoise

Posted on | June 22, 2008 | No Comments

on saturday i had a hellacious tummy bug, which left me weak and fragile and drained.
the last one i had was in 1999, so i shouldn’t complain too much.

on sunday, i was feeling hungry but delicate.
along with the lemon surplus, everyone is having a fabulous season of mandarins, so i was given freshly squeezed juice to drink all day.
i went out for a stroll around our vegie patch and to my delight, some greens were ready for picking, after only 3 weeks!
i got some rocket and lolla rossa and basil and parsley…..my husband boiled a couple of eggs for me and made a simple salad and it was just perfect.

today i feel fine and have already picked enough stuff for tonight’s dinner…..salade nicoise.

we like it with:
mixed salad greens
tomato
red onion
basil and flat-leaf parsley and thyme
sun dried tomato
kalamata olives
tuna
hard boiled eggs
croutons
and a dressing half way between a mayonnaise and a red wine vinaigrette, with plenty of garlic.

it is so exciting to be eating our own produce again!
so fresh and tasty!

i am so enthused that i am eyeing off the small concrete slab (used to be a garden shed, got blown away in the cyclone, now it’s just where we have the picnic table)….as a new site for a chicken hilton.
stay tuned.
