a surplus, no, an embarrassment of lemons

most of the year, i am scrounging for lemons.
we use lemon juice constantly.
i won’t touch the bottled stuff….if it isn’t freshly squeezed, then i am not interested.
i can always detect a peculiar flavour….
our own tree lived in a terracotta pot for years, then got transferred into the ground when we moved here.
it has always struggled a little, but after a good mulching and feeding, it has suddenly started to flourish and the lemon crop has been amazing for the size of the tree.
i think everyone s having a good year for lemons…we’ve been showered with them lately.
i’ve just squeezed a whole heap…..some i will freeze and with some i am making my favourite lemonade syrup.
homemade lemonade
……………..
6 lemons, juice and zest
2 kilos sugar
60g epsom salts
90 g citric acid
30g tartaric acid
10 cups boiling water.
stir all together until sugar is dissolved.
when cool, bottle.
to serve:
add to ice and water/sparkling water to taste.
