my favourite chicken marinade

this is a thai thing and simply delicious.
we call it gai yang (grilled chicken), but we might be wrong about that.
paste:
4 cloves crushed garlic
1 tsp cracked black peppercorns
2 tsp sugar
2 tsp turmeric
2 tsp paprika
1 TBLSP chopped fresh coriander root
1 tsp curry powder (whatever you like)
2 small fresh red chillies, chopped
1 TBLSP vegetable oil
grind the ingredients to a paste with a mortar and pestle.
set aside.
take 1 kilo chicken thigh fillets and cut them all in half.
massage the paste into the thighs (the chicken thighs), cover and leave them overnight.
the next day, grill them until tender and you can baste them with coconut milk while you do so, if you like.
we love this chicken served simply with steamed jasmine rice, and a spicy carrot salad.
to make the salad:
grate a couple of sweet carrots.
dice a tomato.
dice a red onion.
roughly chop some fresh coriander or mint.
dress the whole lot with this:
dressing:
1 TBSLP sweet chilli sauce
1 TBLSP fresh lime juice
1 TBSLP fish sauce
add a little extra brown sugar if you would like.
