luncheon party

i have a group of friends, driving en masse from port douglas, for lunch at the soap-farmlet today.
this crowd is usually soaked in veuve clicquot, so i have bottles chilling and a lot of other stuff standing by.
my husband-cum-kitchen assistant (the one who yells YES CHEF in an extremely gratifying manner) is at the market for the first part of the festivities, so i had to devise a menu that would be all about diners helping themselves, rather than me plating up delicate morsels and serving to the table.
we are having:
a spicy pork and beef meatloaf, with it’s own baked-in herb tomato sauce.
kipfler potatoes with aioli, spring onions, and lots of fresh herbs.
baked baby beetroots with fetta and walnuts and a balsamic glaze.
beautiful ripe tomatoes with basil and red wine vinaigrette.
it’s the most beautiful clear morning.
i’ve been up pottering about since 6am and all that remains to be done is to make the salad dressings and peel the beets.
and after all that, i am thinking some french vanilla ice cream with sour cherries and meringues, should suffice.
luckily, champagne goes with everything.
