i made this one in about eight minutes flat tonight.
while it was cooking, i made a salad, washed the day’s dishes and watched some tv.
pre-heat oven to 180 Celsius.
you need:
700g good beef mince
a free range egg
a cup and a half of breadcrumbs
a biiiig splash of worcestershire sauce (we prefer lea & perrins)
a biiiiiig squeeze of sri racha hot chili sauce
a cup full of baked beans
3 chopped spring onions, white and green
a big pinch of mixed italian herbs
2 cloves garlic, crushed
salt, pepper.
MIX this altogether, with your immaculately clean hands.
set aside.
now, take out your loaf tin.
i used one of those smashing silicon things that don’t need lining or oiling.
chop up about 3/4 cup of tomatoes, roughly.
i used a mix of cherry tomatoes and regular tomato.
tear up some basil leaves.
add a tsp of brown sugar, plus some salt and pepper.
mix it all roughly and spread it into the bottom of the loaf tin.
place the beef mix on top and press gently to fill the tin.
place into hot oven and cook for about 45 minutes.
remove from oven and let it sit for 10 minutes.
now, invert it onto a platter with deep sides….there will be hot juices, so be careful and quick.
hard salad….i’ve blogged about these before, because we love them around here.
tonight’s version was very simple. a simple hard salad, get it? *insert laughing like a drain*
grate two carrots.
finely dice a TBLSP red capsicum
finely dice a TBLSP purple onion
not so finely dice a small lebanese cuke
crush a clove of garlic
add loads of chopped continental parsley
dress with plenty of red wine vinegar, sugar, salt, pepper, olive oil.
it is delicious if it is more tart than oily, so be generous with the vinegar.
