this has been the thing to make for dinner lately.
it’s been HOT and HUMID and nobody really wants to eat hot food and nobody really wants to cook.

you’ll need, per person:
*1 cup cooked penne or spirals or shells
*1 cup mixed vegies…..we’ve enjoyed cooked broccoli/red onion/red capsicum/tomato/peas….it’s a colourful mix with some textural interest
*1/2 cup of cooked diced chicken…..if you toss the chicken cubes in a little oil and curry powder and then saute until cooked, it is delicious.
*chopped herbs, your choice
*sea salt and fresh ground pepper

dressing:
two sorts of dressing have been happening around here.
you need 1/4 cup of good homemade mayonnaise to start either one.

1. whisk mayo with a tsp curry powder and 1/2 tsp sugar and enough rice bran oil/grapeseed oil, lemon juice and garlic to make a runny, tart, creamy, spicy dressing.

2. whisk mayo with oils and red wine vinegar, plus loads of fresh basil and garlic and 2 tsp sun dried tomato paste.

this is really nice served warmish, with a shaving or two of parmesan over the top.

it’s great because you can just add the ingredients to the bowl as you cook them and get them marinating in the dressing.

fresh casual delicious food.
my favourite kind!
