frrruit cake

i have to share this amazing fruitcake recipe….i am eating a slice right now with a cup of black tea and it is as dark and fragrant and rich and moist as peaty loam. or loamy peat.
allow two days for this. or start it early and bake it late.
you need:
1 cup water
1 kg mixed fruit
1 cup sugar
250g butter
1 TBLSP golden syrup or maple syrup or honey
2 tsp cinnamon
1 tsp mixed spice
1 tsp nutmeg
1 tsp baking soda
place these in a pot and bring to the boil, mixing well.
leave it to cool, overnight or during the day.
pre-heat oven to 130-150 Celsius.
prepare your baking tin.
i used a regular-sized silicon baking thing and it worked fine.
now, add:
2 beaten eggs
1 tsp lemon or orange essence
1/2 tsp vanilla essence
1/2 tsp almond essence
1/2 tsp ginger
1/4 tsp curry powder (yes, how interesting is that?!)
2 level cups plain flour
3 TBLSP cocoa powder
2 tsp baking powder
the cocoa powder is my own addition and it is just enough to add some mystery and depth to the cake, without it being chocolatey.
bake it for 2.5 hours.
