apple sponge pudding

one of my favourite dinner guests is coming here in a couple of hours.
mr damian.
usually we see him once a week, but between his travel schedule and my bronchitis, 6 weeks have slipped by.

so, maurice is setting the table, i’ve got a bottle of special champers chilling, i’ve made a chicken and broccoli bake thing AND i’m making apple sponge pudding.

have you ever had this dessert?
it’s hot stewed apple, covered with a sponge mixture and you bake it altogether and serve it hot with cream and/or icecream.
it is YEARS since we’ve had this thing and we are salivating.
the weather is perfect for it, too.
drizzly and gray and chilly and dank.
the sort of weather you need warm delicious pudding.

how to make the pudding:
half fill a pie dish with stwed and sweetened apple (or another fruit if you choose).
keep it warm (this is vital).

cream 125g butter and 125g castor sugar together.
add an egg and beat well.
add 125g sifted flour and 2 tsp baking powder and pour the mixture over the hot fruit.
spread it out to cover.
bake about 3/4 hour at 190C.
sift on icing sugar and serve hot.

there!
simple and yummy.

this recipe is from the edmonds cook book (best selling book in new zealand for the last godknowshowmany years).
they recommend their own baking powder of course….edmonds, sure to rise….but i’ve had fine results with australian brands.
nothing is as good as edmonds…..but don’t let’s tell the australians. hehe.

    Oooh, that dessert sounds lovely- I’m sure I can veganise that!

    hi d0t!

    i’m sure you can veganise it too.
    have you a recipe for vegan sponge….with egg substitute?

    i’ve just googled vegan spongecake and it doesn’t look promising.
    you won’t get that sponge texture without eggs.
    HOWEVER you can easily get something new and just as tasty.
    i guess it’s the combination of hot fruit and warm cakey goodness with icecream that is so appealing…..you can easily make something warm and cakey without eggs.

    we are both doing fine thanks…i’m about fifty million times better and so is he.
    i’m pretty much back to normal, in fact and he is mending rapidly.
    he can use his arm a little more each day; it is very encouraging.
    we are hoping to hear good news at his 6 week check up and not “you definitely need surgery now”. gack!

    hey, we are not coming to melb in august, but going to sydney in september instead….so i won’t catch you this year, unfortunately. unless we have a sudden mad whim to fly south….sometimes we do…..

    i hope everything is good with your crew too. what soap have you been making lately?

    Aw, that’s a shame we won’t be able to catch up next month. No matter, I’m always here :)

    There’s a book available called “Vegan Cupcakes Take Over The World.” I’m pretty sure I’d be able to find something in there that I can bake over apples… and if not, I KNOW I’ll have fun experimenting… mmm, cupcakes.

    On the slab this week is nothing incredibly mindblowing. A soy milk soap swirled with organic, fairtrade cocoa and pumped up with cocoabutter. Rose Geranium and Frankincense with pink clay swirl. Patchouli and hempseed because I am a patchouli ho :)

    And now I need to go and find an icecream substitute :) At least now I have a great excuse to only eat really good quality dark chocolate!

    I haven’t actually tried the egg substitute- so far I’ve been replacing it with either flaxseeds and water, tofu or banana… but Ibhaven’t been making sponges so I haven’t had any problems.

    There’s a book called “Vegan Cupcakes Take Over the World” which I really want to get a copy of- I bet there’s something in there that would be spongy enough for that recipe, and then all I’ll need is an icecream replacement :)

    It’s a shame you’re not coming to Melbourne, but we’ll catch up sometime in the future, I’m sure. I know you’ll have a good time in Sydney- will you be popping into SEOC?

    Nothing earthshattering on the slab recently. One is a soy milk bar with fair trade, organic cocoa swirl and a healthy helping of cocoa butter. Another is Rose Geranium, Frankincense and pink clay. And the third was Patchouli and Hempseed because I am such a ho for patchouli. Yum.

    I’m glad to hear you guys are doing better, and I REALLY hope Maurice gets away without having to go through surgery!

    hi there and thanks….i’m thrilled that you are enjoying the recipes.
    i like very basic stuff with plenty of flavour…..it’s all in the attention to detail.
    i’m lucky to be at the farmer’s market every week and have my pick of such great produce….it makes all the difference, don’t you think?
    and i love talking about food…..so thanks for dropping in and reading.
