summery pasta salad

we enjoyed this immensely this evening.
it’s a sort of warm pasta salad, dressed with pesto and a little olive oil and red wine vinegar, with loads of vegies.

firstly, make 1/2 cup of your favourite pesto recipe.
i made mine with fresh basil leaves, fresh garlic, freshly grated parmesan, plenty of olive oil and a couple of handfuls of mixed macadamias and almonds (skin on).

get your pasta on to cook.
enough for four people.
farfalle or penne or shells are pretty good for this sort of thing, but i didn’t have any…..i used fettucini and it worked out ok.

while the pasta is cooking, take a big bowl and throw in the following:
1 cup of cooked peas
a couple of sliced scallions, green and white
a roasted red capsicum, sliced thinly
2 ripe tomatoes, diced
a couple of handfuls of baby rocket leaves

drain the pasta and toss it in pesto and a little red wine and olive oil, salt and pepper.
add it to the salad bowl stuff while it is still warm.
taste and add salt/pepper/red wine/olive oil to taste.
grate over a little extra parmesan.
and serve.
we had it with a couple of mac’s hop rocker pilseners from new zealand, but a rose wine would have been equally groovy.

it’s got all my favourite things and it’s simple and delicious and it looks pretty.
what’s not to love?

    Yum, not a lot of fresh peas around here lately, but soon. I cannot wait. I make something similar and throw in some pine nuts for a bit of a crunchy/nutty bite.
