cincinatti chili

i made this tonight:
Ingredients
- 2 T olive oil
- 2 rashers bacon
- 1 1/2 cups onion, chopped
- 1 cup green or red capsicum pepper, chopped (optional)
- 500g minced lean beef
- 1 425g can chopped tomatoes
- 1 425g can tomato puree
- 120g tomato paste
- 1 425g can kidney beans
- 1 425g can cannellini beans
- 200g corn kernels
- 4 sun-dried tomatoes, minced or ground (optional)
- 3-4 cloves garlic, crushed
- 2 T unsweetened cocoa powder
- 2 T chilli powder ( i used flakes)
- 1/2 t cinnamon
- 1/2 t allspice
- 1/2 t cardamom
- 1 t cumin
- 1/2 cup red wine
- 1/4 cup wine or cider vinegar
- 2 T honey or sugar, to taste
- a splash of worcestershire sauce
method:
saute onions/capsicums/garlic/bacon in oil.
add spices and fry for a couple minutes, until fragrant.
add meat and brown thoroughly.
add all other ingredients and allow to cook for an hour….add a little water if chili becomes too thick.
this is better if made a day in advance to allow the flavours to mellow and blend.
the spice selection and addition of cocoa were a bit far out…..but goodness me, what sensational chili.
we had it with baked potatoes, sour cream and grated cheddar cheese from NZ.
i suspect it will be even tastier tomorrow.
